This sun-kissed sparkler is the perfect summer brunch sipper! The best mimosas are those that accentuate rather than mask the beautiful flavors in a sparkling wine. This seasonal recipe relies on the ripest summer fruits and a touch of raspberry liqueur.

You can make the juice mixture ahead of time and store in the refrigerator for up to three days before serving. Feel free to double or triple the recipe depending on your guest count.

Ingredients

  • 3 tablespoons raspberry liqueur
  • 8 raspberries
  • 1 cup peach juice
  • 1 bottle chilled Estate Brut Cuvée
  • Sliced peaches and raspberries for garnish

Serves 8 mimosas

Instruction

Place raspberries in the bottom of a cocktail shaker (or mason jar) and muddle.

Add liqueur and peach juice.

Cover and shake well.

Store jar in fridge and chill well.

Shake mixture again prior to serving.

Pour equal portions of mixture into 8 flutes.

Fill the glasses with chilled Estate Brut and top with fresh fruit.
